What makes a medium roast "medium"?
Medium roasts are pulled between first and second crack, roughly 410–428°F (210–220°C), with a total roast time typically between 10 and 14 minutes. The beans are medium brown, non-oily, and keep enough origin character to distinguish a Colombian from an Ethiopian while still showing cocoa and caramel sweetness from development.
The underlying extraction principles — grind, temperature, time, ratio, agitation — apply to any roast, but medium roasts have the widest margin for error.
How to choose a great medium roast
- Origin still shows through. Colombian medium roast tastes like caramel and walnut; Ethiopian medium roast keeps berry and floral notes; Guatemalan pushes spice and cocoa.
- Arabica > Robusta. For specialty-grade medium roasts, 100% Arabica is the norm. Robusta blends tend to be harsher.
- Whole bean over pre-ground. Freshly ground beans retain far more aromatic compounds. A solid burr grinder under $50 changes the game.
- Roast date, not sell-by. The best medium roasts are consumed within 3–5 weeks of roasting.
